The Green Edge is an entirely vegan operation, so no eggs are used in the bistro kitchen, deli, bakery, or grocery. All dishes that would traditionally contain eggs (e.g. 'Eggs Benedict', 'Bac'n & Egg MocMuffin') use plant-based substitutes. The dedicated vegan kitchen means no egg cross-contamination risk from ingredient storage or prep.
